Now that the weather is getting warmer I start making salads more frequently since they are light and refreshing. Making the perfect salad is definitely an art form that requires a delicate balance of greens (I personally prefer less greens and more veggies/quinoa/brown rice), veggies, nuts and/or dried fruit, sometimes crumbled cheese such as feta/goat cheese and enough dressing to throughly coat the salad. Here are three of my favorite salads, which exemplify that perfect combination of healthy, but still extremely tasty and loaded with flavor.
